Lowfat Crockpot Beef Stew, Cajun Style
Just like they would make in New Orleans!

Serves 4

Ingredients

Qty Unit Ingredient
1 lb Roast - bottom round, cut into 1 1/2 inch chunks
1 Onion - medium, coarsley chopped
1 Pepper - large green, seeded and cut into 1 inch chunks
2 Celery stalks, coarsely chopped
2 Garlic cloves, minced
1 Can Beans - 15.5 oz red, rinsed and drained
1 Can Tomatoes - 14.5 diced
1 C Beef broth - reduced sodium
4 Tsp Cajun seasoning
2 Tb Water, cold
1 Tb All Purpose Flour
2 Scallions, thinly sliced for garnish


Instructions

In a 6 quart slow cooker, add beef, onion, bell pepper, celery, garlic, beans, tomatoes, broth, and seasoning; mix well. Cover, cooking 8 to 10 hours on low or 4 to 5 hours on high. About 20 minutes before the cooking time is up, whisk water and flour together in a small bowl until smooth. Stir in 1/4 cup of the hot liquid from the slow cooker until blended. Stir mixture into the slow cooker. Cover, cooking on high until the pot simmers and thickens, about 15 minutes. Serve garnished with scallions.
