Lowfat Crockpot Zesty Chicken Stew
A 1/2 cup of cooked pasta per serving will increase the light points by 2 points.

Serves 8

Ingredients

8 Chicken - drumsticks skinned
3/4 Tsp Salt
1 Tb Olive oil
1 ea Onion - large, coarsely chopped
1 C Bell pepper - large, green, seeded and diced
2 Celery stalks, diced
4 Garlic cloves, minced
1 Can Tomatoes - 14.5 oz with Italian herbs, diced
1 C Wine - dry white
1 Tsp Italian seasoning
1/4 Tsp Crushed red pepper
2 Tb Parsley - fresh flat leaf, chopped


Instructions

Sprinkle chicken with 1/4 salt; heat the oil in a large skillet over medium-high heat. Add chicken, cooking until browned, turning occasionally, about 10 minutes.

When you are ready to start the crockpot: add chicken to a 6 quart slow cooker. In a skillet, add onion, pepper, celery, and garlic, cooking until veggies soften, about 3 minutes, stirring frequently. Add to the slow cooker, along with tomatoes, wine, seasoning, crushed red pepper, and remaining salt. Mix well. Cover, cooking for 8 to 10 hours on low or 4 to 5 hours on high. When cooking time is up, stir in parsley and serve.
