Sunday - Roast Beef Supper

I am starting this week off with delectable, homey, Roast Beef with New Potatoes and Shallots . I am pairing that with some Oven Roasted Caramelized Cauliflower for a delicious dinner that roasts away and fills the house with wonderful smells. Your whole family will love it.

Monday - Easy Cheesy Skillet Lasagna

Let's start the work week off with a super cinchy dinner that simmers to delicious, cheesy perfection on top of the stove. Stove Top Lasagna is a perfect choice for an easy Monday night dinner idea. Toss together a prepackaged salad and dinner is a breeze.

Tuesday - Souper Satisfying

For Tuesday, I am doing a vegetarian, yet really satisfying Black Bean and Pumpkin Soup. I am serving that with old fashioned Southern-style cornbread and a crispy, green salad with garlicky dressing. Yum.

Wednesday - Quick and Tasty Chicken Tenders

I love chicken tenders, they cook up so quickly and lend themselves to so many flavor options. These Marmalade Chicken Tenders cook really quickly. I am serving them with some oven roasted sweet potatoes and oven roasted broccoli. You'll want to preheat your oven first thing tonight, get the sweet potatoes in and then toss the broccoli with olive oil, season it and get it roasted. When the sweet potatoes are about halfway through their cook time, start those quick and tasty chicken tenders. They look awesome on the plate atop a pile a sweet potatoes and the broccoli gives great color and flavor contrast. That tangy orange sauce is terrific on the chiicken and those sweet potatoes.

Thursday - Crispy, Comforting Salmon Croquettes

Crispy, fried Salmon Croquettes are simply delicious and a blast from my childhood. I loved them then and love them even more now knowing they came straight from my pantry ingredients, provide healthy omega 3s and are really inexpensive to make. Pile them on top of quick mashed potatoes nestled alongside a crispy, garlicky green salad and you have a delicious, comforting and homey dinner.

Friday - Bacon Bliss on a Plate

To celebrate Friday I am doing my favorite Chicken and Gnocchi with Bacon. It is so amazingly good, you will really enjoy it. I am serving that with a fresh, refreshing crispy salad to complete this meal your family will love.

Saturday - Simple Strata after a Busy Day

After a busy day of errands and holiday shopping this Goat Cheese Strata with Tomato and Basil comes together in a flash and is so easy, and also inexpensive, your wallet will love it and your family too!
