Foil Packet Salmon
So easy and tastes great, kids and adults will love this dish. Serve with rice and steamed vegetable.

Serves 4

Ingredients

Qty Unit Ingredient
1 1/2 lb Salmon Fillets
1 C Slivered Carrots
1 C Red or green bell pepper, slivered about 1 small pepper
2 Tb Peanut or Vegetable Oil
2 Tsp Garlic, chopped
2 Tb Soy sauce
1 Tb Rice vinegar
1 Tb Hoisin Sauce
1 Tb Garlic, minced


Instructions

Preheat oven to 450 degrees. Using a piece of 2 feet heavy duty aluminum foil, fold in half to make it double thick that is about 12 inches by 12 inches. Put foil on baking or cookie sheet. Put fish in center of foil and top with carrots and peppers.

Heat the oil in a small saucepan and add the garlic and ginger and saute them until they are fragrant, about 1 minute. Add soy sauce, vinegar and hoisin sauce and simmer for about 2 minutes. Remove pan from heat.

Pour sauce over fish and vegetables. Wrap foil into an aritight package around the fish and other contents. Fold and seal edges. Bake the package for about 20 minutes. Remove from oven and open immediately so the fish stops cooking. Serve.
