Grilled lime chicken with Avocado Salsa
Great simple marinade. Wonderful flavor and easy.

Serves 6

Ingredients

Qty Unit Ingredient
2 lb Chicken breasts - boneless skinless, cut into 1 inch chunks
2 Tb Lime juice, about 1/2 lime
1 Tb Olive Oil
1 Tb Kosher Salt
2 ea Avocado - ripe, peeled and mashed
1 ea Tomato, diced
1/4 C REd or yello onion, finely diced
1/4 Tsp Salt or more to taste


Instructions

In a plastic resealable bag put chicken breasts and add lime juice, oil, and salt and make sure chicken is well coated. In a medium bowl, combine the salsa ingredients, avocados through salt, and mix until well combine.

Preheat the grill to medium high heat, and cook the chicken breasts for about 3 to 4 minutes per side until they start to turn golden brown and no longer pink in the middle. Remove from the heat and serve them whole or sliced into strips, topped with avocado salsa.
