Red Snapper V8
Terrific and easy!

Serves 4

Ingredients

Qty Unit Ingredient
1 1/2 lb Red Snapper Fillets
1/4 Tsp Kosher Salt
Paprika to taste
8 Oz V8 Vegetable Juice
1 Tsp Lemon Juice
1 Tb Butter


Instructions

Preheat oven to 375 degrees. Line a baking/cookie sheet with foil and spray the foil with nontsick cooking spary.

Put fish on baking sheet and sprinkle with salt and paprika. Bake them until the fillets are white and cooked through, about 15 minutes. In a small saucepan, bring the V8 juice to a boil. Simmer it for about 5, turn off heat, add stir in lemon juice and butter. Remove fish from oven, and put on serving plate, top with sauce and serve hot.
