Sweet Potato and Apple Soup
Easy, healthy and great on a cooler evening. Serve with a salad and chunky, hearty bread. Sure to become a family favorite.

Serves 6

Ingredients

Qty Unit Ingredient
2 ea Sweet Potatoes - medium, peeled and cubed
1 ea Apple, peeled, cored and quartered
1 ea Onion - medium, peeled and quartered
2 ea Garlic cloves, peeled
2 Tb Vegetable oil
Salt and pepper to taste
4 1/2 C Chicken or vegetable broth
C Yogurt, sour cream or goat cheese to taste - optional


Instructions

Preheat oven to 450 degrees. Put the potatoes, apple, onion, and garlic in a roasting pan. Toss the items in the vegetable oil and season lightly with salt and pepper. Roast for 30 minutes, making sure to stir it every 10 minutes. Before removing it from the oven, make sure potatoes are soft.

Puree roasted items in a blender or food processor, adding just enough broth to cover it. Will probably go better to puree in two batches. Soup should be smooth but not too thick. Keep the soup warm in a stockpot over low heat. Stir in optional dairy choice at the table when served for a creamier taste.
