Tortilla Casserole
A simple casserole version of tacos without the meat. Easy and delicious!

Soft taco tortillas, cut into 1 inch pieces, or you can use 3 cups tortilla chips |

Cheddar Cheese, shredded, more if desired |

Instructions
Preheat oven to 400 degrees. In a large bowl combine all the ingredients and mix well. Reserve half the cheese. Place the mixture in a 2 quart
casserole dish ancd cover with foil. Bake for 30 minutes, Remove aluminum foil and broil the casserole for 5 minutes prior to removing from the oven. Top with crumbled tortilla chips, if desired.
