Fish Tacos
Just like you get along the beach.

Taco Shells or soft taco sized flour or whole wheat tortillas |

Instructions
In a heavy skillet heat oil and add peppers, onions, and garlic and saute them until they are tender and just start to turn brown about 7 minutes.
Stir in the tomatoes with liquid and the cumin and bring mixture to a low boil. Place fish on top of skillet ingredients and sprinkle with lime juice and season fish with salt and pepper.
Cover and reduce heat enough to keep the sauce simmering and cook it for 15 minutes, until the fish is opaque and flakes easily. Pull fish apart in chunks and serve. Use a slotted spoon so tacos
are not too drippy.
