Healthy and Spicy Salmon and Cucumber Salad
I love spicy salmon and paired with cucumbers, it is a great dish.

Serves 2

Ingredients

Qty Unit Ingredient
1 1/2 C Cucumber, sliced
3/4 lb Salmon fillet - skinned, cut into portions
1 Tsp Jalapeņo pepper, minced
1/4 C Green onions, sliced
2 Tb Cilantro, chopped
2 Tb Lemon juice - fresh, divided
1/2 Tb Soy sauce
1/2 Tb Olive oil
Salt and pepper to taste


Instructions

Preheat a skillet over medium high heat until hot. Season salmon with lemon, salt and pepper and sear 2 to 3 minutes on each side. Whisk together remaining ingredients except cucumber, then add cucumber and toss to combine. Serve topped with salmon.
