Bok Choy, Carrot Slaw with Apples
This is a great light side.

Serves 4

Ingredients

Qty Unit Ingredient
1 lb Bok Choy - baby, havled lengthwise
1 Apple, peeled and cut into matchsticks
2 Carrots - large, shredded
3 Tb Lemon juice - fresh
1 Tb Vegetable Oil
1 Tsp Ginger - fresh, finely grated
Salt and pepper to taste


Instructions

Rinse bok choy under cold water to remove grit. Cut crosswise into thin strips, and place into a large colander. Sprinkle with salt, tossing to coat. Top with a heavy plate to drain of excess water. Mix apple, carrots, lemon juice, oil, and ginger in a large bowl. Add bok choy. Season with salt and pepper, and serve.
