Instructions
Prick potatoes with a fork several times and cook them in the microwave on high, until they are slightly softened, about 5 minutes per potato.
Preheat oven to 400 degrees. While potatoes are in the microwave, steam the brocolli spears in a pot that is coverd with a half inch of water for about 7 minutes till tender. Drain and finely
chop.
When potatoes are soft, carefully slice them in half and scoop out most of the flesh, leaving a layer of potato inside the skin.
In a medium bowl, combine the potato flesh,
brocolli, butter, milk and salsa and 1 cup of cheese. Put the mixture back into the potato skins. Top with remaining cheese and bake for 7 inutes until potatoes are heated through and cheese on top is
melted.
