Grilled Salmon with Herb Pesto
A great heart healthy and really simple and delicious dish.

Serves 4

Ingredients

Qty Unit Ingredient
1 1/2 lb Salmon fillets
2 Tb plus 1 tsp of Vegetable Oil
Salt and Pepper to taste
1/4 C Fresh herbs - chives, basil and cilantro
1 Tb Water
2 Tb Fresh lemon juice
1 Tb Pine Nuts - optional
1 Tsp Honey


Instructions

Preheat grill to medium high heat. Brush both sides of fillets with 1 tsp of the oil and season fish with salt and pepper.

In a blender or processor, puree the herbs you selected, 2 tb of the oil, water, lemon juice, nuts and honey.

Grill salmon for 5 minutes per side or until it flakes easily and is no longer dark pink in the middle. Serve it topped with herb pesto.
