Lowfat Crockpot Margarita Chili
This chili really has Mexican flare!

Serves 4

Ingredients

1 lb Pork tenderloin, cut into 1/2 inch cubes
1 C Onion - large Spanish, chopped
1 Pepper - large green bell, seeded and chopped
1 Pepper - large red bell, seeded and chopped
2 Garlic cloves, chopped
1 Can Tomatoes - 14.5 oz diced with jalapenos
1 Can Tomato sauce - 8 oz no salt added
1 Can Yellow hominy - 15 oz, rinsed and drained
4 Tb Cilantro - fresh, chopped
3 Tb Chili powder
2 Tb Tequila
2 Tsp Cumin seeds, crushed
3 Tb Cornmeal
1 Tsp Lime zest, grated
Lime wedges (optional)


Instructions

In a 6 quart slow cooker, add pork, onion, bell peppers, garlic, tomatoes, tomato sauce, hominy, 2 tablespoons cilantro, chili powder, tequila, and cumin seeds; mix well. Cover cooking on low 8 to 10 hours, or on high 4 to 5o hours, until pork and vegetables are tender. Twenty minutes before the cooking time is up, slowly stir cornmeal and lime zest into the pot. Turn heat to high and cook until thickened, about 15 minutes. Stir in remaining cilantro. Garnish with lime wedges and serve.
