Thai Rice Pot
Very healthy and good for all ages.

Serves 6

Ingredients

Qty Unit Ingredient
2 Tsp Peanut or Vegetable Oil
2 ea Bell pepper - 2 different colors, cut into 1/4 inch strips
8 Oz Shitake or Conventional mushrooms, sliced
1 lb Ground Pork, turkey or vegetarian "meat" - lean
3/4 C Dry white rice
1 Can Chicken or Vegetable Broth plus 1/2 cup water - 15 oz
3 Tb Soy Sauce
3/4 Tsp Salt
1/4 Tsp Pepper
4 ea Scallions, chopped
1 C Carrots, shredded
1/4 C Cilantro, chopped
2 Tb Fresh Lime juice


Instructions

In medium skillet heat 1 tsp oil and add peppers and mushrooms and cook them stirring occasionally until they are soft, about 5 minutes.

In a pot with a tight fitting lid, heat remaining oil and add meat. Brown and spoon off any fat, if there is any and add the skillet ingredients to pot. Add rice, broth, water, soy sauce, salt and pepper to the pot and bring to a boil. Reduce heat, cover pot and simmer without removing lid until the rice is fully cooked about 15 to 20 minutes.

Stir in scallions, carrots, cilantro and lime juice and serve.
