Tortilla Tower
Kind of like burritos, but not. You can add a layer of your favorite ground meat if your family likes. Serve with your favoite toppings like sour cream,
salsa, olives and tortilla chips. You decide.

Mexican Style diced tomatoes - 14 oz, drained or 1 1/2 cups mild salsa |

Instructions
Preheat oven to 425 degrees and spray 10 inch round cake pan with cooking spray.
In a bowl combine beans, corn and tomatoes.
Make the tower by alternating layers. Start with one tortilla, lay flat on 10 inch pan and top with scoop of bean mixture, then a handful of cheese. Continue stacking and layering untl all
ingredients are used, end with cheese.
Bake tower covered with foil for 10 minutes. Remove foil and bake for 5 minutes more. Serve, after allowing to cool for a few minutes, then cut into wedges
