Gnocchi with Sundried Tomatoes and Artichokes
This recipes goes together really quickly, tastes great and looks great too.

Serves 6

Ingredients

Qty Unit Ingredient
1 pkg Tricolor or white gnocchi - 16 oz
1/4 C Olive Oil
1/4 Tsp Red pepper flakes- optional
1 Tsp Garlic, minced
1/2 C Marinated Sundried Tomatoes, drained and cut into pieces
1 Can Artichoke hearts - 14 oz, drained and quartered
4 ea Fresh sage or basil leaves, slivered
1/2 C Gouda cheese, grated or diced


Instructions

Prepare gnocchi according to the package directions.

In a skillet heat oil and add the red pepper and garlic and cook for 1 minute. Add the tomatoes and artichokes and saute them over medium low heat for 7 to 10 minutes.

Drain the gnocchi and add it to the skillet along with the sage or basil leaves. Stir to combine and heat through. Transfer to a serving plate and top with cheese. Stir together and serve.
