Goat Cheese, Bacon and Rotini
Creamy, and full of flavor.

Serves 8

Ingredients

Qty Unit Ingredient
1 pkg Rotini - 16 oz
8 Oz Bacon
1 Tb Olive oil
1 ea Small red onion, slivered
1 Tsp herbes de Provence or dried thyme
1/2 C Chicken broth
4 Oz Goat cheese
1 C Frozen peas


Instructions

In a large pot, cook pasta according to package directions. Reserve one half of a cup of the liquid and drain pasta.

in a skillet cook bacon, until crisp and drain on a paper towel. When cool, cut into small pieces. Clean skillet and heat oil and add onion and herbes de provence and cook until onion is browned, stir occasionally.

In a measuring cup combine broth and pasta cooking water and heat in microwave until warm.

Return pasta to pot and add crumbled goat cheese. Add broth water mixture and stir to combine. Add bacon, onions, and peas and stir til warmed through.
