Grilled Linguine with Tomato
Serve with a side of garlic bread for a great meal.

Serves 4

Ingredients

Qty Unit Ingredient
3 lb Tomatoes - plum, cored and halved lengthwise
5 Tb Olive Oil
1 Tb Thyme - fresh chopped
1 lb Linguine
1/2 C Parmesan cheese - finely grated
Salt and pepper to taste


Instructions

Heat a grill to high. Toss tomatoes with 3 tablespoons oil and thyme in a large bowl. Season with salt and pepper. Grill tomatoes, starting cut side down, until soft and charred, 8 to 12 minutes per side. Return to bowl. Cook pasta in a large pot of salted water per package instructions. Drain, returning to pot. Add remaining oil, cheese, and grilled tomatoes. Divide among bowls, topping with Parmesan to serve.
