Linguine with Potatoes, Green Beans, and Pesto
Just a hint: start the pasta and potatoes at the same time. Add the green beans half way thru and all will be done at the same time!

Serves 6

Ingredients

Qty Unit Ingredient
2 Potatoes - medium waxy, peeled and cut into 1/2 inch cubes
1 lb Linguine
1/2 lb Green Beans, trimmed and cut into 1 inch lengths
2 Qt Pine Nuts
2 C Basil - fresh leaves
2 Garlic - cloves, peeled
1/2 C Parmigiano-Reggiano cheese, grated
1/2 C Olive Oil - Extra virgin
Salt


Instructions

Bring a large pot of salted water to a boil. In a food processor, combine basil, garlic, salt to taste, and cheese. Pulse until chopped roughly. Add oil in a steady stream, continuing to blend until the mixture is creamy. Add more oil if necessary. Add pine nuts, and pulse to chop them into the sauce. Add potatoes to the pot of boiling water. Stir . Add pasta, stirring frequently, cooking about 10 minutes. When pasta is half done, add beans. When the pasta is done, the beans and the potatoes should be tender. Drain, and toss with sauce. Season with salt and oil to taste. Serve.
