Linguine with Sausage Ragu
The ragu for this recipe is doesn't need to be simmered all day, and it tastes just as good.

Serves 6

Ingredients

Qty Unit Ingredient
1 lb Liguine
1 Tb Olive Oil - Extra virgin
1 Onion - medium, chopped
1/2 lb Italian sausage - removed from the casing
1 C Milk
1/4 C Tomato paste
1 C Parmigiano-Reggiano cheese, freshly grated
Salt and pepper to taste


Instructions

Bring a large pot of salted water to a boil. In a large skillet over medium heat, add oil. After one minute, add onion. Cook until it softens, stirring occasionally, about 5 minutes. Add sausage bits, and turn heat to medium-high. Cook until the sausage is nicely browned, 5 to 10 minutes, stirring occasionally. Add milk, tomato paste, salt and pepper. Stir to blend; simmer for 5 minutes until it is thick but not dry. Add milk or water if it becomes too thick. Cook pasta until tender. Drain and toss with sauce. Add half of the cheese. Taste, adjusting seasoning if necessary. Serve with remaining cheese.
