Pasta with Mint, Salmon, and Peas
This is a wonderful spring meal when mint is in season.

Serves 6

Ingredients

Qty Unit Ingredient
1 lb Farfalle
1 1/2 lb Salmon fillet - skinless
2 Lemons - zested and juiced
1 lb Peas - frozen 10 oz
2 Tb Butter
1/4 C Mint - fresh, chopped plus more for serving
Salt and pepper to taste


Instructions

Cook pasta in a large pot of salted water until al dente. Drain and reserve 1 cup pasta water. Return pasta to pot. Season salmon to taste with salt and pepper, and place in a large skillet. Add 1/4 cup pasta water, lemon zest and juice to the skillet, simmering over medium heat, covered, for 10 minutes. Add peas to the skillet and cover, simmering for 6 to 8 minutes, until peas are tender and salmon is opaque. Transfer the skillet mixture to the pasta pot, adding butter and mint. Season to taste with salt and pepper. Toss, adding pasta water as desired. Serve, sprinkled with more mint.
