Pasta with Potatoes and Green Beans
This is a fantastic side when fresh pesto is in season.

Serves 4

Ingredients

Qty Unit Ingredient
2 Potatoes - waxy
8 Oz Pasta - short tubular
8 Oz Green beans, trimmed and halved
1/2 C Pesto
Salt and pepper to taste


Instructions

Peel potatoes, cutting into 1 inch cubes. Place in a large pot of water, bringing to a boil. Add 1 tablespoon salt and pasta. Return to boil, and cook for 2 minutes. Add green beans, and return to a boil. Cook until vegetables are tender, and pasta is al dente. Drain, and toss with pesto, seasoning with salt and pepper. Serve.
