Rigatoni with Goat Cheese
For a different taste, serve with your choice of optional toppings.

Serves 6

Ingredients

Qty Unit Ingredient
1 lb Rigatoni
1 1/2 C Goat Cheese, crumbled
1/2 C Parmesan cheese, finely grated
Optional toppings
1/4 C Black olives, sliced
1/4 C Herbs, torn
1/4 C Pine nuts, toasted
1/4 C Tomatoes - sun dried, slivered
Salt and pepper to taste


Instructions

In a large pot of salted water, cook pasta according to package directions. Drain, reserving 1/2 cup cooking water. Return pasta to pot, tossing with cheeses. Season with salt and pepper, adding reserved pasta water as desired. Sprinkle with any of the desired toppings, and serve.
