Spaghetti with Fresh Red Sauce
Enjoy this meal when you can get fresh, ripe, juicy tomatoes.

Serves 6

Ingredients

Qty Unit Ingredient
2 lb Tomatoes - fresh plum, cored and roughly chopped
1 lb Spaghetti
1/2 C Parmigiano-Reggiano cheese, freshly grated
3 Tb Butter
Salt and pepper to taste


Instructions

Bring a large pot of salted water to a boil. Add butter to a large skillet over medium heat. When butter has melted, add tomatoes, turning heat to high. Cook until tomatoes begin to juice, stirring occasionally. Turn heat to low and cook until the sauce thickens. Cook pasta until tender. Drain. Toss pasta with tomatoes and cheese. Season to taste. Toss and serve.
