Pork Chops with Wine Sauce
The sauce on these chops is superb!

Serves 4

Ingredients

Qty Unit Ingredient
4 Pork Chops - bone in about 1 inch thick
1 C Red wine - Zinfandel
2 Tb Red Miso
1/4 C Basil - fresh, roughly chopped
Salt and pepper to taste


Instructions

Over medium-high heat, heat a heavy skillet for 3 minutes; add chops. Sprinkle with salt and pepper, and brown them on one side for 4 or 5 minutes . Turn, browning on the other side, 3 or 4 minutes, until firm and almost cooked thru. Transfer to a warm plate, and lower heat to medium. Add wine and cook; stir occasionally with a wooden spoon scraping off any meat bits stuck to the pan until wine is reduced by half. Turn heat to low and add miso. Stir briskly until the mixture is smooth. Taste and add more salt or pepper if desired. Spoon over pork chops, garnish and serve.
