Roast Beef with New Potatoes and Shallots
A great meal for a Sunday afternoon!

Serves 4

Ingredients

Qty Unit Ingredient
1 1/2 lb Potatoes - red, halved
1 1/2 lb Beef roast - eye of round, tied
1 lb Shallots, peeled and trimmed, halved lengthwise
2 Tb Olive oil
Salt and pepper, to taste


Instructions

Preheat oven to 400 degrees.

Toss potatoes and shallots with oil on a rimmed baking sheet. Season with salt and pepper. Push potatoes and shallots toward the edge of the baking sheet, and place the roast in the center. Turn roast to coat in oil. Season with salt and pepper. Roast 40 to 50 minutes, tossing the potatoes and the shallots occasionally. Serve roast with potatoes and shallots.
