Chicken and Gnocchi with Bacon
I created this recipe after eating a similar dish at a restaurant. My family loved it SO much they all cleaned their plates.

Serves 4

Ingredients

Qty Unit Ingredient
2 ea Chicken breasts - boneless skinless - 5 oz each
1 pkg Gnocchi - 14 oz
4 ea Bacon slices
4 Tb Olive oil
1/4 C Parmesan cheese - grated


Instructions

Preheat a skillet with 1 tablespoon olive oil over medium high heat. Salt and pepper the chicken, and cook 5-6 minutes per side until just cooked through. Remove the chicken and cover to keep warm. Cook the bacon in the skillet until crisp, remove and when cool, crumble.

Meanwhile, pour off the bacon grease, wipe the pan with a paper towel, and heat the remaining olive oil. Cook the gnocchi stirring frequently until heated through and very slightly brown - about 8 minutes. Add the bacon, and half the cheese. Stir until melted. Slice the chicken into strips. Put the gnocchi onto a serving platter, top with chicken and remaining cheese.
