Mary Jane's Chicken Soup
My friend Mary Jane stretches a Costco rotisserie chicken into a gallon of delicious soup for about .30 cents per serving.

Serves 12

Ingredients

Qty Unit Ingredient
1 ea Rotisserie chicken or cooked turkey - 3 to 4 lbs
2 Qt Water
1 lb Vegetables - fresh - seasonal - for soup
1 pkg Egg noodles - or 3 C cooked rice


Instructions

In a large stock pot over medium high heat, place the chicken, and add water (or chicken stock) to almost cover. Simmer at just slightly boiling, about 30 - 45 minutes until the chicken is falling apart tender.

Remove the chicken. Add the vegetables of your choice, all chopped bite sized.

Simmer the vegetables while the chicken cools enough to handle. Shred the chicken, adding the meat to the pot and discarding the bones and skin.

Add the noodles or rice last, and cook about 10 minutes, or until noodles are tender.

Mary Jane stores leftover soup in plastic containers for lunches, and she freezes some. It is so rich with chicken flavor, she sometimes dilutes it with water or stretches it with more chicken stock.
