Marmalade Chicken
Chicken tenders cook in a flash.

Serves 4

Ingredients

Qty Unit Ingredient
1 lb Chicken tenders
4 Tsp Olive oil
1 C Chicken stock
2 Tb Orange marmalade
1 Tsp Dijon mustard
1 Tsp Cornstarch
1/2 Tsp Salt
1/4 Tsp Pepper
2 Tsp Olive oil
2 ea Shallot, minced
1 Tsp Orange zest


Instructions

Whisk together stock, vinegar, marmalade, mustard and cornstarch; set aside.

Season chicken with salt and pepper. Heat first amount of oil in skillet. Cook chicken 2 minutes per side. Set chicken aside; cover to keep warm.

Add remaining oil to pan and cook shallots for 30 seconds. Add cornstarch mixture and scrape bits from pan. Simmer until thick, about 2 minutes.

Add chicken and heat to serving temperature. Add orange zest and serve chicken with sauce drizzled over it.
