Asian Grapefruit and Shrimp Salad
This hearty salad makes a great lunch or light dinner!

Serves 4

Ingredients

Qty Unit Ingredient
1 1/2 lb Shrimp
6 C Lettuce
2 Grapefruit, peeled and sectioned, with each section halved
3 Tb Soy Sauce
1 Tb Sugar
2 Limes, juiced
1/4 C Mint - fresh
1/4 C Cilantro, chopped
Hot Red Pepper Flakes
1/2 C Peanuts - dry roasted
Salt


Instructions

Place the shrimp in a saucepan with salted water to cover. Bring to a boil; turn heat off and let sit for 5 minutes. Shrimp should be opaque in center. Cool under cold running water. Peel and devein. If the shrimp are large, cut then in half. Make the dressing: combine soy sauce and 2 tablespoons of water. Add sugar and lime juice. Whisk until smooth. Divide lettuce on 4 plates; Add grapefruit, shrimp, mint and cilantro to each plate. Drizzle dressing on top of each, topping with pepper flakes and peanuts. Serve.
