Fried Rice with Shrimp or chicken
Serve with an egg roll to make a complete meal or serve on the side. Very taty!

Serves 6

Ingredients

Qty Unit Ingredient
1 1/2 C Dry white rice
2 Tb Peanut or vegetable oil
1/2 lb Shrimp, peeled and deveined or diced chicken breast
2 ea Eggs
1/4 C Scallions - about 4, chopped
1 C Frozen green peas, thawed slightly
3 Tb Soy sauce or more to taste
1/3 Tsp Black pepper to taste


Instructions

Prepare rice according to package directions. In a wok or large skillet heat 1 Tb of the oil over medium high heat. Add the shrimp or chicken and saute for several minutes until it is no longer pink. Remove the meat from the pan and set aside. When rice is almost done, heat the remaining oil in the pan. Cook eggs in the heated oil and seperate into small pieces with a spatula while cooking. Add the scallions and cook for a minute. Add the rice, peas, soy sauce and pepper and toss to combine thoroughly. Add the cooked meat and stir the mixture to combine again. Serve.
