Mediterranean Shrimp with Couscous
This dish gets a head start from the seasoned couscous and tomatoes and is ready in a flash and full of healthy, delicious flavor.

Serves 4

Ingredients

Qty Unit Ingredient
1 lb Shrimp - shelled (fresh or frozen)
1 Can Tomatoes - Italian style - 14.5 oz
3/4 C Water
1 pkg Couscous mix with toasted pinenuts
1/2 C Golden raisons
1/2 C Feta cheese - crumbled


Instructions

Rinse shrimp and pat dry. In a large skillet over medium high heat combine tomatoes, seasoning packet from couscous and bring to a boil. Add shrimp and cook 2 or 3 minutes until shrimp is opaque. Add couscous and raisons, cover and remove from heat. Let stand 5 minutes, stir in feta and serve.
