Roman Shrimp
This is a wonderful way to prepare shrimp.

Serves 4

Ingredients

Qty Unit Ingredient
2 lb Shrimp, peeled and deveined
1 Can Plum tomatoes - 28 oz, with juice, chopped
2 Tb Olive Oil - Extra virgin
1 Tb Garlic, slivered
6 Hot Red Pepper Flakes
1 C Mint - fresh, chopped
Salt and pepper to taste


Instructions

In a large deep skillet over medium heat, add oil, garlic, and pepper flakes. Cook carefully until the garlic is just brown. Turn the heat off for 1 minute and add tomatoes. Turn heat back on to medium-high, and bring to a boil. Reduce heat and simmer, stirring occasionally. Season with salt and pepper. Add shrimp, cooking until they are pink, about 10 minutes, stirring occasionally. Taste and adjust seasoning if necessary. Sauce should be very strong. Stir in mint and serve.
