Shrimp Gazpacho
A tasty treat for anyone's tummy!

Serves 4

Ingredients

Qty Unit Ingredient
1 lb Shrimp - medium, peeled and deveined
1 Tb Olive Oil
6 Tomatoes - plum, chopped
1/2 Onion - small red, chopped
2 Garlic cloves, chopped
1/2 Cucumber, peeled and chopped
1/2 C Peppers - jarred bell yellow and red, finely chopped
1 1/2 C Tomato juice
2 Tb Vinegar - red wine
Salt and pepper to taste


Instructions

Heat oil over high heat in a large skillet coating the bottom of the pan. Season shrimp with salt and pepper. Add half of the shrimp to the skillet, browning on both sides and opaque in the center, 3 to 4 minutes. Plate. Repeat. In a food processor, combine tomatoes, onions, garlic, cucumber, and half of the peppers. Add juice and vinegar. Process until smooth and season to taste. Divide mixture among bowls to serve, topping with shrimp and remaining peppers.
