Stir Fried Leeks with Shrimp and Ginger
You could replace the shrimp in this recipe with scallops, chicken chunks, pork, or beef slices.

Serves 4

Ingredients

Qty Unit Ingredient
2 ea Leeks - large, washed and chopped
1 1/2 lb Shrimp, peeled and deveined
2 Tb Olive Oil
2 Tb Ginger - fresh, peeled and minced
1 1/2 Tsp Soy Sauce
Salt and pepper to taste


Instructions

In a large skillet over high heat, pour half of the oil. When it begins to smoke, add leeks. Let sit for 2 minutes, then cook stirring occasionally, for 10 minutes. When the leeks dry out, beginning to brown, remove from the pan and set aside. Over high heat, add the remaining oil and shrimp, sprinkling with ginger. Cook for 1 minutes and stir. Continue cooking, stirring frequently, until shrimp are pink. Add leeks, salt and pepper. When shrimp show no signs of gray, they are done. Stir in juices. Taste and adjust seasoning if necessary. Serve.
