Broccoli Soup
This creamy soup will warm you on a cool autumn night!

Serves 4

Ingredients

Qty Unit Ingredient
1 1/2 lb Broccoli - florets, separated, stems peeled, cut into 1/2 inch rounds
1 Tb Olive Oil
1 ea Onion - medium, havled, sliced
1/8 Tb Nutmeg, ground
4 C Chicken stock
1/3 C Rolled oats
Salt & pepper, to taste


Instructions

In a large saucepan, over medium-low heat, add olive oil and saute` onion, 5 minutes. Add nutmeg, cook 30 seconds. Stir in broth, 1 1/2 cups water , oats, and broccoli. Add salt and pepper to taste. Bring to a boil, reduce heat and simmer until broccoli is tender, 5 - 10 minutes. Puree the soup in batches; return the soup to pot. Serve.
