Instructions
Spray a large pot with cooking spray and cook chicken over medium heat. Chicken should be lightly browned, cook for about 5 minutes. Add the onion
and garlic and saute until tender.
Add broth, salsa, spices and lime juice and bring to a boil. Reduce heat and cook 10 minutes and then add corn and cook for an additional 5 minutes.
When ready top with tortilla stips, chopped avocado, and shredded cheese of your choice. If freezing allow to cool to room temperature and then put in a freezer safe container, label and freeze up
to 3 months. When ready to reheat, remove from freezer to thaw. When heated through, eat and top with toppings.
