Chicken Tortilla Soup
You can use a rotisserie chicken to save time, flavor is so good.

Serves 6

Ingredients

Qty Unit Ingredient
1 1/2 lb Chicken breasts - boneless skinless, cut into 2 inch pieces
1 ea Onion, chopped
1 Tsp Garlic, minced
6 C Chicken broth - fat free
1 ea Salsa - 16 oz
1 Tsp Chili Powder
1 Tsp Ground cumin
2 Tb Lime juice
1 pkg Frozen corn - 16 oz


Instructions

Spray a large pot with cooking spray and cook chicken over medium heat. Chicken should be lightly browned, cook for about 5 minutes. Add the onion and garlic and saute until tender.

Add broth, salsa, spices and lime juice and bring to a boil. Reduce heat and cook 10 minutes and then add corn and cook for an additional 5 minutes.

When ready top with tortilla stips, chopped avocado, and shredded cheese of your choice. If freezing allow to cool to room temperature and then put in a freezer safe container, label and freeze up to 3 months. When ready to reheat, remove from freezer to thaw. When heated through, eat and top with toppings.
