Chinese Chicken Noodle Soup
You can find fresh Asian style noodles in most supermarkets these days.

Serves 4

Ingredients

Qty Unit Ingredient
6 C Chicken stock
10 Ginger - fresh, peeled and sliced
2 Garlic - cloves, peeled and lightly crushed
1 Tb Vegetable Oil
1 Tsp Garlic, minced
1 1/2 C Chicken, cooked and chopped
1 C Broccoli - florets, 1 inch
1 lb Noodles - Wonton
2 Tb Soy Sauce
1 Tb Sesame Oil
1/2 C Scallion, minced


Instructions

Heat stock with crushed garlic and ginger. Simmer, keeping warm until you are ready to use it. Add vegetable oil in a deep skillet over medium-high heat. Add minced garlic and chicken, stirring occasionally, until the chicken begins to brown. Add broccoli, cooking for about 5 minutes, stirring occasionally. Strain. Add stock. Adjust heat to a gentle boil. Add noodles and cook until they separate and are tender, stirring occasionally, about 3 minutes. Stir in soy sauce and sesame oil. Adjust seasoning if desired. Divide in bowls, garnishing with scallions. Serve.
