Instructions
Spray a large pot with cooking spray and heat oil over medium heat. Add the cauliflower and onion and cook for several minutes. Gradually add
flour and then stir in broth. Add the milk and cook for 6 minutes until bubbly and thick.
Stir in thyme and Brie and season with salt and pepper and cook until the Brie is melted. Working in
small batches, puree soup using a blender or processor. Return to pot.
Serve topped with green onions.
