Creamy Wild Rice Soup
Great on a cool autumn day!

Serves 4

Ingredients

Qty Unit Ingredient
1/4 C maragarine
1 ea Onion, chopped
8 Oz Mushrooms (sliced)
1 ea carrot, finely chopped
1/4 C flour (all-purpose)
1 Tsp salt
1/4 Tsp pepper
2 C chicken or turkey broth
12 Oz Evaporated skim milk
1 C wild rice (cooked)
4 Oz Neufchatel cheese, cut into 1/2 inch cubes


Instructions

In a 4 quart saucepan, over medium heat, melt margarine. Add onion, mushrooms, and carrot; saute until tender. Stir in flour, salt, and pepper. Whisk in broth. Heat to boiling, stirring occasionally. Boil and stir one minute. Stir in milk and wild rice. Stir in cheese; cook and stir until cheese melts and soup is thoroughly heated. Enjoy!
