Lowfat Crockpot Potato and Leek Soup
So tasty!

Serves 4

Ingredients

Qty Unit Ingredient
4 ea Medium leeks, trimmed to white and light green parts and cleaned well, sliced
3 ea Russet Potatoes, peeled and chopped
8 ea Flat leaf parsley sprigs
1/2 Tsp Salt
1/4 Tsp Pepper
8 C Vegetable broth
1/2 C Fat Free half and half
Fresh or dried chives for garnish


Instructions

Put leeks, potatoes, parsley sprigs, salt and pepper in a 5 or 6 quart crockpot. Cover and cook for 4 to 5 hours on high or 8 to 10 hours on low. When finished cooking remove sprigs of parsley. Pour soup in small batches into a blender or processor and puree. Return to the crockpot. Whisk half and half into the soup and garnish with chives. Serve .
