Spicy Sausage and Kale Soup
You do not have to use spicy sausage if young children will be eating it. Serve with fresh tossed salad and thick crusty bread.

Serves 12

Ingredients

Qty Unit Ingredient
1 lb Spicy Sausage
1 ea Yellow Onion - large, quartered and thinly sliced
1 Tb Garlic, minced
2 Can Chicken broth - 32 oz each
4 C Water
12 Oz Kale, chopped
6 ea Red Potatoes, halved and thinly sliced
2 Can Kidney or Pinto beans, with liquid


Instructions

REmove casings from sausage and cook the sausage in a large pot for a few minutes until lightly browned. Add the onion and garlic and cook the mixture, for about 5 minutes, stirring occasionally.

Add the following ingredients one at a time, broth, water, kale, and potatoes, cover the pan and bring to a simmer between each new addition to the soup.

Cover and simmer for 10 minutes. Add the beans with their liquid and stir to combine. Serve when heated through.
