Sweet Potato Pear Soup
Great to make during the fall when ingredients are fresh. You can exchange apples for the pears if you would like.

Serves 6

Ingredients

Qty Unit Ingredient
4 C Sweet Potatoes, peeled and cut into 1 inch cubes
2 C Baking Potatoes, peeled and cubed
4 C Chicken or Vegetable Broth - fat free
1/2 C Onion, chopped
1/2 C Orange Juice
Salt and Pepper to Taste
2 Tb Butter
2 ea Bartlett Pears, peeled and chopped
1/2 Tsp Ground ginger
1 Tb Orange liqeur, optional
1/2 C Buttermilk or half and half - fat free


Instructions

In a large pot, combine pototoes, broth and onion. Bring to a boil and reduce heat. Cook until potatoes are done abou 10 minutes more.

Working in small batches puree soup in a blender or processor, then return to pot and add orange juice and season with salt and pepper.

In a skillet melt the butter and saute the pears for 5 minutes, or until they are tender and then add ginger. Add the pears to the mixture in the pot and stir in the liqeur and buttermilk. Cook on low heat until heated through.
