Wild Rice and Tomato Soup
Serve with fresh bread on a cold evening.

Serves 8

Ingredients

Qty Unit Ingredient
2 Tb Olive oil
1 ea Large onion, chopped
3 ea Large Carrots, chopped
2 ea Celery Stalks, chopped
3/4 C Wild Rice
1 1/2 C Water
3 lb Fresh tomatoes, chopped or 28 oz can of crushed tomatoes
1 Tsp Sugar
1/2 Tsp Salt
1/4 Tsp Pepper
2 ea Bay leaves
1 pkg Chicken or vegetable broth - 32 oz


Instructions

In a large pot, heat oil over medium heat. Add the onion, carrots, and celery. Cook them until softened about 7 minutes. Add the remaining ingredients. Bring to a boil, lower the heat, cover and simmer for 35 minutes until the rice and vegetables are tender. Remove bay leaves before serving.
