Breaded Mozzarella with Pesto Sauce
Sandwiches can be for dinner, too! Try this recipe in many different ways with any rich, wholesome bread and cheese for some interesting flavors .

Serves 4

Ingredients

Qty Unit Ingredient
10 Oz Mozzarella cheese, thinly sliced
8 ea Bread (thickly sliced French or Italian works best)
4 Tsp Pesto sauce
2 ea Eggs
4 Tb Olive oil
1 Dash Salt
1 Dash Pepper


Instructions

Gently remove crusts from bread slices. Spread the pesto sauce on four slices of bread then place cheese slices on each of them. Top each half-sandwich with another piece of bread. In a small bowl, crack the eggs and season to taste. Beat the eggs witha fork for one minute. Dip the sandwiches into the egg, coating all sides. In a large frying pan, heta the oil and brown each sandwich on both sides for 3-4 mintues on each side. Drain the sandwiches on paper towels. Optional: Cut the sandwiches into triangles then serve immediately .
