Cauliflower Marranca
One of Shelley's family's favorite fall recipes.

Serves 4

Ingredients

Qty Unit Ingredient
1 ea Onion, chopped
3/4 lb Mushrooms - sliced
1 ea Lemon, juiced
1 Tb Olive oil
1 ea Head cauliflower, cut into florets
3 Tsp Garlic - minced
3 C Brown rice, cooked
2 C Cheddar cheese - grated


Instructions

Preheat oven to 350.

In a skillet over medium high heat, saute the onion, mushrooms, and lemon in olive oil for ten minutes. Add the caulflower and garlic, and saute for a few more minutes.

Place the vegetables, cooked brown rice and cheese in a casserole dish. Bake uncovered at 350 degrees for 30-40 minutes until it is bubbly on top.
