Cheesy Breaded Eggplant
This dish is so filling that some may mistake it for a main dish! Try it cold or hot.

Serves 4

Ingredients

Qty Unit Ingredient
1 ea Eggplant (large, sliced)
1 C Bread crumbs
1 ea Onion (medium, chopped)
1 Tb Garlic, minced
1/4 C Olive oil
1 C Parmesan cheese


Instructions

Dribble one teaspoon of oil over bread crumbs. Add onions and garlic and mix just enough to coat the bread crumbs. Dip sliced eggplant in the crumbs until covered. Fry in remaining oil for ten-fifteen minutes until both sides are lightly browned. Remove slices from pan and sprinkle with Parmesan cheese while still warm. Ready to serve .
