Easy Curried Chick Peas
This Indian style vegetarian dish is one of Shelley's fall favorites. Serve with rice, yogurt and/or pitas.

Serves 4

Ingredients

Qty Unit Ingredient
1 Tsp Turmeric
1/2 Tsp Cayenne pepper
1 Tsp Fenugreek
1 Tsp Cumin
1/2 Tsp Coriander
1/4 Tsp Garlic powder
2 Tsp Curry powder
2 ea Onions, chopped
1 Can Chick peas - large
2 ea Lemon, juiced
3 ea Tomatoes - or 28 oz canned, chopped


Instructions

In large sauce pan over med-high heat: "Fry" spices, stirring constantly w/ wooden spatula. Add onion & "fry" until edges are brown. Add 1/4 cup lemon juice, chick peas, tomatoes. Lower heat & simmer about 30 minutes. Add more lemon juice if too dry.
