Sesame Egg Noodles with Broccoli
The sesame paste (tahini) adds a new taste to noodles in this dish. Try Chinese rice noodles, too.

Serves 4

Ingredients

1/2 lb Egg Noodles
1 lb Broccoli
1 ea Red chili (dried)
1 1/2 C Baby corn
2 Tsp Garlic (minced)
3 Tb Tahini (sesame paste)
1 1/2 Tb Soy sauce
1 1/2 Tb Red wine vinegar
1 1/2 Tb Brown sugar (dark)
1 1/2 Tb Sunflower oil
2 Tb Sesame seeds
1 1/2 Tsp Ginger (powder)


Instructions

Cut the broccoli into florets and finely chop the red chili. Submerge the broccoli and corn for a minute in boiling water, remove, plunge into cold water, then drain well. To the boiling water, add the noodles and cook according to package directions until tender. Drain, rinse under cold water, and drain again. In a separate bowl, add the tahini, soy sauce, vinegar, and sugar. Mix well. Heat the oil in a large frying pan until almost smoking. Add the garlic, ginger, and chili pepper. Stir fry for one minute. Add the vegetables and stir fry for three more minutes. Add the noodles and tahini mixture to the seasoned vegetables in the frying pan. Stir for a few more minutes until heated evenly. Sprinkle with sesame seeds. Ready to serve.
